Kaufman’s opened a new chapter in the store’s history about one year following the fire that destroyed the Dempster Street store on Nov. 5. “It has changed me,” owner Bette Dworkin said. “It has given me a tremendous dose of not being in control of my world. It forced me to be patient with some things and I am not really a patient person, but I didn’t have a choice.”

You could say the sheer amount of different diversities in Skokie is amazing. At Niles North High School, for example, more than 100 different languages are spoken by students.

That being said, the Jewish community is one of the many cultures that has a strong presence in the village. From being the home to the Illinois Holocaust Museum and Education Center  to the many synagogues present. With all that are also restaurants - The Bagel in Old Orchard Mall comes to mind and Emma's Bagel Cafe (formerly Bagel Country) at 9306 Skokie Blvd., are just a few of the many restaurants frequented by the Jewish community.

Recently, KitchenDaily.com, a popular online news and recipe site, said Kaufman's Deli has the best bagels in America, ranking them number-one overall against eight similar restaurants across the country, including several from New York.

"You’d be hard-pressed to find a New York-caliber bagel in Chicago proper, but if you drive about 16 miles north you’ll come across Kaufman’s, which recently reopened after undergoing an extensive renovation due to a fire," Kitchen Daily said. "Not only do they serve up the best bagel outside of New York, they’re also home to a full bakery and Jewish deli, making their own pastrami and corned-beef in-house.

"All the baked goods served here are made from scratch in the same technique since Maury Kaufman first opened it in 1955," they added. "Go for the chewy, just-dense-enough bagels, but stock up on other baked goods while you’re there; it’s also one of the best bakeries in the country."
